With a long history of international exploration, Portugal can lay claim to the world's first global fusion cuisine, with ingredients from the Americas, Africa and Asia mingling with homegrown elements.

However, much of Portuguese cuisine and food products remains somehow unknown outside the country, "which is why the annual SISAB exhibition in Lisbon is so important". It acts as a shop window for Portuguese suppliers of food, fish and wine to attract foreign agents.

Held in the Atlantic Pavilion between February 12th and 14th 2007, this meeting ground will see buyers from more than 50 countries connecting with more than 200 local suppliers. And buyers from the United Arab Emirates can take part too.

Together with support from ICEP Portugal (the Portuguese Trade Centre in Dubai), regional food and beverage buyers can receive meals and accommodation free*, with the benefit of a whole range of tours, meetings and demonstrations arranged from Lisbon. This means you can easily contact the right people in charge of products, marketing and packaging of a wide range of Portuguese foodstuffs.

Acclaimed as an "ideal meeting point" by past attendees, SISAB offers products both old and new. Typical of the products on offer are:

- Olive oil. From pure organic to flavoured oils, Portuguese olive oils are increasingly winning awards at major international festivals.

- Wine. From traditional Port to light refreshing white wine as well as distinct full body red wine, Portugal's wine regions offer an excellent range to taste.

- Mineral water. Portugal boasts mineral water that aids weight loss, available in different fruit flavours.

- Coffee. Different flavours of coffee with, for example, almond or vanilla aromas.

- Sugar. Unique to Portugal is a light sugar, with 50% less calories.

- Dairy Products. As well as fruit, Portuguese yoghurt now comes spiced with chili for extra flavour.

All in all, SISAB 2007 will provide an excellent showcase for Portugal's food industry. We very much welcome your participation in SISAB 2007 and as such recommend that you register the dates in your diaries.

Portuguese cuisine is hugely underrepresented outside Portugal. Often amalgamated within Mediterranean cooking, it has, in fact, its own distinctiveness.

At its best, Portuguese food is simple ingredients impeccably prepared. Based on regional produce, emphasizing fish, meat, onion, olive oil, tomato, and spices, it features hearty soups, homemade bread and cheeses, as well as unexpected combinations of meat and shellfish.

And the Portuguese have a long history of absorbing culinary traditions from other peoples. The age of discovery was propelled by the desire for exotic spices and ever since Vasco da Gama discovered the sea route to India at the turn of the sixteenth century, they have proved enormously popular.
