Art of Dum follows the traditional ‘Dum Pukht’ style of slow cooking, something that is rarely heard of in the cloud kitchen format. The creations by the Chef artists pay homage to the culinary heritage of the royal kitchens of Awadh - characterized by rich aromas and flavours. The Dum Pukht style of slow cooking refers to letting the dishes breathe in their own aroma and juices. It is this technique that works like magic to beautifully infuse the flavours from the various spices and herbs, making each dish a delight for the senses.
The Dum Pukht style of cooking takes hours of preparation, hence challenging the modern-day norm of ready to eat food that is prevalent in the cloud kitchen space. Art of Dum offers a traditional and healthier alternative with Dum Pukht dishes cooking in sealed clay pots, that keeps the flavours, taste as well as the nutrition of the food intact.
Dishes like their signature Dal Makhani is slow cooked for approximately 24hrs, the Dum Handi ka Gosht takes 6 hours and the Chulhey ka Dum Murgh takes 2 hours to cook.
Completing the in-home dining experience is premium packaging which promotes a sustainable and healthy lifestyle with a zero-plastic policy, reusable premium quality glass jars, clay handis and steel cutlery. The brand encourages its customers to reuse and recycle their packaging.
The menu includes succulent melt-in-the-mouth kebabs, fragrant biryanis, luscious gravies, wholesome rolls and indulgent sweet dishes.
The brainchild of Sanjay Vazirani (CMD, Foodlink), Art of Dum, is in line with his mission to be at the forefront of food innovation and operational excellence. Art of Dum is currently located in Al Karama, Al Barsha and Discovery Gardens. The restaurant will also foray its presence in other parts of Dubai in the coming months.
