China Mood brings Chaozhou cuisine to Muscat
Connoisseurs of oriental fare can enjoy rare epicurean pleasures from one of the key coastal regions of China, during the Chaozhou Tasting Promotion in China Mood at the Al Bustan Palace Intercontinental Muscat this month.
In a monthly promotion, which features cooking from a different Chinese province every month, the Chaozhou Tasting Festival pays tribute to this ancient cuisine which originated on the Chaozhan Plains more than one thousand years ago.
Using a tempting combination of fresh ingredients, Chaozhou is particularly well known in China for its seafood and vegetarian dishes which may be cooked over a slow fire, deep fried, steamed or stir-fried. The Chaozhou style brings together unique combinations of flavours; salty, sweet, sour and spicy. Piquant and unusual sauces such as tangerine jam have been devised to complement steamed lobster whereas the better known, intensely flavoured fish sauces go with most dishes.
Many of the Chaozhou classic dishes are light whilst retaining a satisfying depth of taste. Crisp, deep-fried leaf vegetables added as an edible garnish to the beautifully presented dishes, are evidence of other regional culinary influences.
With a team of seven Chinese chefs, overseen by Sous Chef Tan Ping, China Mood offers the discerning diner an impressive range of choices to suit all tastes and preferences.
Tan Ping, Sous Chef at the Al Bustan Palace said, "Largely connected to Cantonese food, Chaozhou cuisine is the least heavy-handed of all Chinese cuisines due to its light taste and use of fresh seafood and vegetables as the main ingredients. This tasting promotion aims to give our guests an insight into the various cooking styles, ingredients and flavours which have originated from this vast and colourful land."
