Nine graduate students along with two professors learnt process of Food Sensory Evaluation at Al Islami Foods
Dubai: "Practice is a key to succeed in the business world. The educational institutions and the industry can create synergy to develop practical skills of students, who are the custodians of next generation." says, Saleh Abdullah Lootah, Managing Director of Al Islami Foods.
Saleh Lootah was addressing a 'Food Sensory Evaluation Workshop', which was organised for UAE University, Al Ain, by the Rearch & Development Department of Al Islami Foods at its Sensory Evaluation Lab set up adjacent to Al Islami head office in Dubai.
" We look forward to doing more joint activities for the benefit of the students. We give special importance to the feedback from students as. That is how we keep improving the quality of our products to suite the food trends in consumers", added Saleh.
Nice graduate students, along with two professors learnt: Health & safety Procedures, quality control measures to ensure safety and hygiene, HACCP certified production facilities and distribution centers, Real Halal from Farm to Fork, cross functions of New Product Development (NPD), Research & Development (R&D), Marketing and Supply Chain teams to drives consumer focused and innovative products, human senses to evaluate palatability of food, Sensory Testing and Food Manufacturing.
Primary Sensory attributes
Types of sensory testing involved: Descriptive, Preferential and Differential. For instance, sensory evaluation results in Table 1 below show how a chicken product is evaluated.
Professor Afaf Kamal-Eldin, Department Chair, Department of Food Science, UAE University commented:
