New training programme for kitchen teams to target hand hygiene and address correct plastic glove usage as hotel guests globally cite good hygiene practices as a top ranking reason when booking
Award-winning UAE-based hospitality and service sector hygiene solutions company, Dhofar Global Trading, has launched a new training programme for its growing portfolio of Gulf-based clients at the annual Hospitality Hygiene Summit.
The one-day event, which took place recently at the Habtoor Grand Hotel, Dubai, looked at the latest trends and issues affecting staff, housekeeping and F&B hygiene standards, with a series of panel debates and presentations addressing best practice, new technologies and the impact of good hygiene on guest satisfaction and bottom line.
"Good hygiene practices consistently rank in the list of top priorities for hotel guests and we have developed a number of tailored in-house programmes designed to zero in on key issues affecting hygiene standards - and ultimately, business revenues," said Chandan Singh, Deputy General Manager, Dhofar Global Trading.
Citing a 2010 industry study published in the Journal of Food Protection, which suggested that prolonged glove usage can in fact create a bacteria-friendly environment, Singh shared details of the company's latest training programme which focuses on the proper use of gloves within a kitchen environment, as part of its commitment to promote exemplary hygiene practices across the region.
"Used correctly, gloves greatly reduce the risk of cross contamination between foods and surfaces, and are integral to good kitchen hygiene practice, however, the false sense of security that comes with the wearing of such gloves can also lead to a rise in contamination-prone behaviour, and so employee education is key," said Singh, speaking as part of an industry panel discussion on 'Best Practice in Guest Areas, Housekeeping and Chemical Regulations'.
He also went on to explain how the structural integrity of gloves can be compromised by tears caused by jewellery or fake fingernails, which can cause tears and increase the risk of leakage, and therefore cross-contamination, as well as provide ideal surfaces on which bacteria can grow.
